Killer BBQ Chicken
    2 fryers, 2-3 lbs each
    1 bottle Wine Marinade

Wash fryers, pat dry. Split or cut into pieces, trim excess fat. Place in covered plastic container, add 1/2 bottle of any Feusi's Own Marinade. Cover and place in refrigerator at least 2 hours before cooking.
Cook over Medium to Low heat, using briquets or gas bbq, baste with balance of marinade and turn several times. Cooking time about 30-45 minutes, or until done. Watch for flare-ups to prevent scorching.

Serve with potato salad, green salad, corn on the cob, melon wedges, or your favorite side dishes. For dessert, have home-made peach ice cream. Serves 4-6 people with leftovers for lunch. How simple can it get?



A Really Mean Pot-Roast
    Chuck roast, 2-5 lbs, bone in or bone out, well trimmed
    2 yellow onions, chopped
    6 garlic cloves, chopped, more or less as desired
    olive oil
    1 lb fresh mushrooms
    potatoes, 1 large potato per person, more or less as desired
    2 beef boullion cubes
    1 bottle Feusi's Own Cajun Pepper Marinade
    Celery, baby carrots, bell pepper, if desired
    Seasoned flour

Remove roast from package, pat dry with paper towel. Do not wash! Dredge with seasoned flour. Place 1 to 2 tablespoons olive oil in hot cast iron or electric frying pan. Sear roast on both sides, about 5 minutes per side. Add about 2 cups water and 2 boullion cubes, turn down heat to simmer. Add garlic, onions, and about 1/2 cup Cajun Pepper Marinade. Simmer for about 1 hour, then turn roast. Add water as needed to keep liquid level up.

Peel potatoes, cut into large size pieces. Wash and slice mushrooms, celery, carrots, bell pepper, and any other veggies. When roast is turned after cooking for first hour, add potatoes. Potatoes will take approximately 1 hour to cook. 30 minutes after adding potatoes, add remaining veggies. Simmer until potatoes are done, about 30 minutes more. Remove meat, potatoes, and carrots; place on platter. Whisk into gravy remaining seasoned flour until thickened to desired consistency, adding more Cajun Pepper Marinade as needed for taste.

This is a meal in itself! Serve with hot rolls.

Grilled Marinated Beef Steak
    Beef Steak..Sirloin, T-Bone, Porterhouse, New York,
Coulotte, or your favorite.
    1 bottle Marinade.

Prick with fork (allows marinade to penetrate meat) Place in covered plastic container. Overnight is best, or just before you start the BBQ. Grill to desired degree of doneness. Serve with baked potato, rice, or pasta, and lots of hot garlic bread. This is far too complicated!
